What does a girl do with Eggnog?

I thought of Pudding? Nogtini? Nog Muffins? Rum is always a good idea? Oh, and a fellow blogger gave me a noggy latte idea (steam it in the microwave for a few mins then add a shot of espresso-Oh my god!). This list of possible noggy goodness goes on and on...like the list of things to do with spaghetti squash, but I wanted something Breakfasty. I believe this will win anyone over. Creamy, a little nuggety from the steel cut oats and banana-ee cause I like that fruit and it's a marriage made in "kitchen" heaven.

RECIPE

Serves: 2 (easily doubled)

Time: 20-30 minutes

Ingredients:

  • 1 Cup, raw, Steel Cut Oats
  • 4 Cups, Egg Nog (I use Horizon Low-fat Nog)
  • 1-2 tsp., cinnamon, ground
  • 1/2 tsp. ground, nutmeg (freshly grated is always best!) OR substitute pumpkin pie spice which is a delightfully spicy combo.
  • 1/4 tsp. ground ginger (optional, I like a little spice)
  • 1 tsp., vanilla extract
  • 1-2 bananas

Add-Ins (Optional)

  • Nuts, chia seeds, dried fruit (cherries would've been nice).

Stovetop Method:

Pour eggnog into a medium-sized sauce pan.  Bring to a boil on medium heat. Once boiling, add oats, cinnamon, nutmeg and vanilla. Stir to combine. Bring to another boil then reduce heat and simmer for approximately 20 to 30 minutes, uncovered. Stir occasionally cause this stuff can get sticky at the bottom. Once cooked and your home smells like Betty Crocker lives amongst you, slice half a banana and toss in the bottom of a bowl. Smash it if you'd like.  Top with oaty goodness and a few more slices on top for presentation. SERVE!
